I have been on a journey to reduce processed foods from my diet. Not because I’m trying to lose weight, but because I feel like crap when I eat processed junk.
I have spent the last couple of weeks diving into my good ‘ol Forks Over Knives cookbooks and the website searching for yummy recipes.
This past week my friend Toni and I made empanadas with a spinach dip (We followed this FOK recipe). The spinach dip did not have the greatest consistency, but we mixed up the recipe a bit so that may have been our fault. In the future, I would like to also have a cashew cheesy type sauce to go along.
When people find out I’m vegan, they always have tons of questions about energy, protein (of course) and where to shop. I’ve had an uptick in these curious questions the past couple of months, which is motivating me to get back on track with this blog and eventually create an ebook or some kind of guide for going vegan (with emphasis on the Midwest because that is where I live).
